Chocolate Orange Oatmeal Cookies

Ingredients

  • ½ cup unsalted butter
  • ¾ cup light brown sugar lightly packed
  • ½ tsp vanilla extract
  • 1 cup all purpose flour
  • 1 cup rolled oats
  • ½ tsp baking powder
  • ½ tsp baking soda
  • ½ tsp cinnamon
  • ½ tsp salt
  • 1 cup semi-sweet chocolate chips + additional 2-3 tablespoons of chocolate chips for decoration
  • 1 cup chopped candied oranges

Instructions

  • In a bowl, whisk together flour, salt, cinnamon, baking powder, baking soda. Add oats to the bowl and stir to combine.
  • In a large bowl, beat butter and sugar with electric mixer until light and fluffy. Add the egg, vanilla extract and beat until well combined and scrape down sides of the bowl.
  • Gradually stir in flour mixture to the wet ingredients until combined but do not overmix. Add candied oranges and mix to combine. Then fold in chocolate chips to the dough using silicone spatula.
  • Place plastic wrap over the bowl and chill in fridge for 30 minutes or up to 24 hours.
  • Line baking sheets with parchment paper and preheat oven to 350°. Form cookie dough into 2 tablespoon balls and place them on a baking sheet few inches apart. Using your thumb or finger, lightly press down each cookie and place 2-3 extra chocolate chips on top.
  • Bake cookies for 9-11 minutes or until cookie edges are light golden brown. Transfer cookies to a wire rack and let cookies cool.
