I found a bag of Lavash bread at Trader Joe’s the other day and thought these would be perfect for a pizza. I love thin crust pizza and sheets of Lavash bread makes it so easy to whip up fresh out of the oven, crispy pizzas at home.
What is Lavash Bread?
Lavash bread is a traditional thin unleavened bread common in the west and central Asian countries. It’s baked in a traditional oven “tonir” and can be quite large, 30 to 35 inches long. I have bought freshly baked lavash from a middle eastern store and had to hang the bread on the side of my shopping cart! Trader Joe’s lavash bread is smaller, they are 9 x 12 inches and you get 6 lavash breads in one bag. I also like that it also comes in whole wheat, which is what I bought to make my pizzas.

Pizza Toppings
There was enough cheese, protein, veggies and fresh herbs in my kitchen to make four different pizzas. All these ingredients except for roasted bell peppers are also from Trader Joe’s. Jar of my home made Roasted bell peppers are always in my fridge and they come in handy all the time. (See my recipes for Roasted bell peppers).
With so many ingredients you can get super creative with topping combinations and here are the pizzas I came up with:
- Anchovy pizza with fresh tomatoes, olives, topped with quattro fromaggi, and fresh basil.
- Sautéed mushrooms, spinach and pesto pizza with sundried tomatoes and goat cheese with honey.
- Spicy pizza with roast beef and jalapeno jack with bell peppers, sliced red onions and fresh parsley.
- Pizza with salami, roasted bell peppers and grilled artichoke halves, topped with quattro fromaggi and fresh rosemary leaves.

Pizza Sauce
I used three different sauces for my pizzas and that’s right they are also all from Trader Joe’s!. Tomato Basil Marinara Sauce ( compared to other marinara sauce, it’s not overly sweet) and Spicy Chunky Tomato & Pasta Sauce (which is pretty spicy and that’s why I like it) are my particular favorites and I frequently use them for pasta dishes and other tomato sauce based dishes. As for the pesto sauce, this is the first time I bought this from Trader Joe’s and I was pretty impressed! It has fresh basil and garlic flavors but it’s not overwhelming. You can also use spicy marinara sauce from alternate brands if you can’t find this particular one from Trader Joes’.

Assemble Your Pizzas
Conveniently, two Lavash bread fit side by side on a lined baking sheet so you can bake two pizzas at once! Spread the sauce evenly and start layering the bread with toppings, we’re almost there!



Tasty Pizzas Ready to Eat in Under 10 Minutes
Bake these pizzas for 5-6 minutes in a 450 degree oven. When done, garnish the anchovy pizza with fresh basil and roast beef pizza with fresh parsley. I cut the pizzas in small rectangular shapes and transferred them to a charcuterie board so my family can easily grab pizza slices of their choice.

The day I made this it was a cold and gray day but these colorful pizzas sure lightened up the lunch table. I like to use colored glass plates to enhance colorful dishes and these pieces in mint green makes me think we’re well into spring already! Colored glass tableware like this can be purchased through sites like Food52.com, Etsy, and Replacements.

Lavash Bread Pizzas
Ingredients
Anchovies, Olives and Fresh Tomato Pizza
- 1 sheet lavash
- 3 tbsp marinara sauce
- 10 anchovy fillets
- 1 small tomato, sliced and seeds removed
- ¼ cup marinated, pitted olives
- 1½ cups shredded cheese (I used quattro fromaggi)
- fresh basil leaves for garnish
Spicy Roast Beef Pizza
- 1 sheet lavash bread
- 3 tbsp spicy marinara sauce
- ¼ red onion, thinly sliced
- ¼ fresh bell pepper, sliced length wise
- 4 ounces thinly sliced deli roast beef
- 1 cup jalapeno jack cheese, rough chopped
- 1-2 tsp fresh parsley for garnish
Mushrooms and Spinach Pesto Pizza
- 1 sheet lavash bread
- 3 tbsp pesto sauce
- 2 tbsp olive oil
- 6 ounces crimini mushrooms, cleaned and sliced
- 1 cup fresh baby spinach leaves
- ¼ ounce goat cheese with honey
- 2 tbsp sun dried tomatoes, pre-sliced
Salami Pizza with Grilled Artichokes and Peppers
- 1 sheet lavash bread
- 3 tbsp marinara sauce
- 6-7 slices parma salami
- ¼ cup roasted bell peppers, slice in thin strips
- ⅓ cup grilled artichoke quarters
- 1½ cups shredded cheese (I used quattro fromaggi)
- 1 tsp fresh rosemary leaves
Instructions
- Line baking sheet with parchment paper and turn on the oven to 450°.
Anchovy, Olives and Fresh Tomato Pizza
- Place sheet of Lavash bread on baking sheet and spread marinara sauce on the bread. Top with anchovy fillets, sliced tomatoes and olives and sprinkle quattro fromaggi.
- Bake for 5-6 minutes or until cheese has completely melted. Garnish pizza with fresh basil leaves before serving.
Spicy Roast Beef Pizza
- Place sheet of Lavash bread on baking sheet and spread marinara sauce evenly on the bread. Top with roast beef pieces, bell peppers, sliced onions and sprinkle jalapeno jack cheese.
- Bake for 5-6 minutes or until cheese has completely melted. Garnish pizza with fresh parsley before serving.
Mushroom and Spinach Pesto Pizza
- Heat small skillet over medium heat and add olive oil. Once olive oil starts to sizzle, add sliced mushrooms and lightly sauté for 2 minutes. Turn off heat and set mushrooms aside to cool.
- Place sheet of Lavash bread on baking sheet and spread pesto sauce evenly on the bread. Top with spinach leaves, followed by mushrooms, goat cheese and sundried tomatoes.
- Bake for 5-6 minutes.
Salami Pizza with Roasted Artichokes and Peppers
- Place sheet of Lavash bread on baking sheet and spread marinara sauce evenly on the bread. Top with lightly folded salami, grilled artichokes, roasted peppers and sprinkle quattro fromaggi and fresh rosemary leaves.
- Bake pizza for 5-6 minutes or until cheese is completely melted.
