Pretty tart made with juicy, ripe plums and buttery, flaky crust from puff pastry is both simple and delicious for any occasion.
Perfect Late Summer Tart
I can’t believe summer’s almost over. Seems like the season just started! I picked up some beautiful juicy plums the other day and thought plum tart would be a perfect end of season treat. This tart is not only pretty to look at, but its very easy to make, not too sweet and delectable!
What you Need
- 4 Plums: I used standard black plums, but any plums will work, as well as pluots, plumcots or apriums.
- Corn starch: Tossing fruit with cornstarch will thicken the fruit juice and create shine.
- Cane sugar: Adds sweetness in case your fruit lacks the right amount of sugar.
- Lemon juice: Helps to balance the sweetness of plums.
- Puff pastry: I always use all butter puff pastry from Trader Joe’s, but since this is a seasonal item, you can try one from Dufour, which is also an all butter puff pastry dough.
- Quince Jelly: To give the tart shiny glaze, I used quince jelly, but apple jelly or apricot jam also works.
- Egg wash: It gives pastry edges nice golden brown finish.
Simple, Easy Steps to Make Delicious Plum Puff Pastry Tart
- Combine sliced plums, cornstarch, sugar and lemon juice in a bowl.
- Roll out pastry dough into 9¼” x 10½” rectangle.
- Make a 3/4″ border with a knife, careful not to cut through the dough and dock inside of the rectangle with a fork.
- Transfer the dough onto a lined baking sheet, layer plum slices over the pastry and brush egg wash around the edges.
- Bake the tart for 15-17 minutes in a 400 degree oven, or until pastry edges are puffed up and golden brown!
- Cool the pastry for 5-10 minutes, then heat jelly in the microwave for 20-25 seconds.
- Brush plum slices with jelly and serve while warm or at room temperature!
I left my tart in a cool area for a while before serving and plum slices turned into beautiful reddish-pink hue!
How to Serve and Enjoy Plum Puff Pastry Tart
This tart is perfect for a party, or casual get-together. It’s fine on its own, but you can elevate it with some powdered sugar sprinkled on top, whipped cream, frozen yogurt or Ice cream.
I served my tart to my friends last weekend and it was also a perfect excuse to bring out my newly purchased Burleigh Pottery pieces. I finally got myself some pieces from their Pale Blue Felicity collection! This delicate floral pattern originated in the 1930’s, and is one of Burleigh’s most popular patterns. Although different colors in the Felicity collection like pink, dove gray, plum and dark blue have been discontinued, I doubt that would happen to this classic color.

Plum Puff Pastry Tart
Ingredients
- 4 plums, pluots or apriums pitted and sliced
- 2 tbsp lemon juice
- 1 tbsp corn starch
- 2 tbsp cane sugar
- 1 sheet puff pastry, thawed in fridge
- 1 egg for egg wash
- 2 tbsp quince jelly (you can also use apple jelly or apricot jam)
Instructions
- In a bowl, combine plum slices, corn starch, cane sugar, lemon juice and set it aside.
- Preheat oven to 400° and line a sheet pan. On a well floured surface, roll out pastry dough into 9¼" x 10½" rectangle. Mark a ¾" border with a knife (do not cut through the dough) and dock inside of rectangle with a fork.
- Transfer dough to a baking sheet and layer plum slices on the pastry. Brush egg wash around the edges and bake tart for 15-17 minutes or until edges are puffed up and golden brown.
- Let tart cool for 5-10 minutes. Heat jelly for 20-25 seconds in a microwave. and gently brush plums with jelly. Serve tart warm or at room temperature.
